Oregano is the dominant herb in Greek gastronomy. In Greece, it is self-sowed and grows in mountainous and rocky areas. Its aroma is atrributal to its essential oil. Due to its composition, oregano has antimicrobial, antifungal, antibacterial and antioxidant properties. It is mainly used as a condiment in Greek cuisine, flavoring recipes based on meat, fish and poultry. It is an integral part of any successful salad and accompanies excellently a variety of vegetables. As a brew we can find it mainly in mixtures with other herbs.
