A traditional product of Greece, the rusks, sweet or savoury, are prepared with a recipe and a process different than that of bread. Once kneaded into loaves, they are baked, then sliced, and baked once more.
They can be consumed as they are or they can accompany all other meals. In Lesvos the most known and most favourite rusks of the consumers are our own, the so called “agiasotika”.
The heptazema rusks are prepared with a traditional recipe that involves the use of a chickpea yeast.
The wheat is sourced from the area Megali Limni in Lesvos. They go well with all types of meals, unleash their flavour when eaten with cheese, and are ideal for fasting.
