Asyrtiko / Sauvignon Blanc
Varieties are harvested within a 20-25 day period from one another. Sauvignon Blanc is harvested first, with Asyrtiko, this highly acid and explosive variety, following. After removing all damaged grapes or foreign materials at the grape selection belt, each variety goes through a cold soak process at 2°C for approximately 36 hours, followed by the alcoholic fermentation process at a controlled temperature of 14°C. The wine remains on its fine less in the wine-making vats for about 2-3 months, to get a richer mouth feel, enhancing the aftertaste duration and the natural aromas of the varieties.
A bright, crystal-clear color with soft golden reflections. Intense and complex nose with tropical and citrus fruit scents. Balanced and full mouth, with a pleasant aromatic duration that captures the nose.
The aromatic richness and freshness of this wine is best developed at 8-10°C. Enjoy this wine coupled with rich risottos, fat fish, turkey stuffed with resins, pork with celery and mature creamy cheese.
