Sauvignon Blanc / Ugni Blanc / Semillon
This is a magnificent wine created by the ‘master’ of long ageing wines. Following a laborious selection process, grapes are transferred into the vats. The fermentation process lasts 22 days under a controlled temperature of 14 to 16°C for Sauvignon Blanc, 17 days under a controlled temperature of 12 to 15°C for Ugni Blanc and 24 days under a controlled temperature of 14 to 15°C for Semillon. This wine is left to age for 3,5 months in three different 225 lt. medium toast barrel types.
Terroir has played an important role in developing this wine’s profile. It has imparted a special flavor richness, high concentration, fine structure and complexity. A superb bright yellow-green color and a surprising alternation of aromatic impressions, with an adventurous blend of mature yellow fruits, vanilla, roasted nuts and spices. Gentle in taste, with a power cloaked in fruit flavors and a thickness balanced out by acidity. It is not coincidental that this wine.
Has been called the ‘Greek Pessac Léognan’.
Served at 8-10°C. Best accompanied by seafood, lobster pasta, chicken with lemon sauce, complex green salads.
