Merlot / Xinomavro

Deka Red wine is made of grapes harvested in the same year, the whole wine making process however takes much longer. The two varieties are harvested within a one-month period from one another, first Merlot in late August and then Xinomavro in late September. Both varieties come from vines with low yield rates and are vinofied separately. The blending process follows. The wine is then left to age in new French barrels of medium and strong toast, which are made of wood selected from 3 different forests, for 18 months. Finally, the wine is bottled 36 months after the harvest.

The aromatic complexity in the nose and mouth is impressive. This complexity has very interesting spicy characteristics and a cosmopolitan touch that amounts too much more than what is expected by each variety separately. The aromas alternately coming out are those of dark fruit, chocolate, pipe tobacco and allspice. What is most interesting is the fact that the nose of the wine develops- rather transforms itself- while in the glass, and this is evidence of the wines’ elaborate fullness. The structure in the mouth is absolutely balanced. The wine is robust and full, however in terms of its tannins and acidity, the intensity shows absolutely no imbalance. The aftertaste is sweet and long lasting, as expected of a good red wine.

Transfer into a pitcher before serving. As all aged wines it needs time to breathe. Ideal serving temperature: 17-18°C. Pairs well with game, red meat, yellow cheese and complex salads.
