One of the most popular cheeses in Greece, it is made from sheep’s or goat’s milk from animals raised in the mountainous areas of Rethymnon and matures in caves in the Cretan mountains. It tastes slightly salty, sweet, buttery and aromas with the special characteristics of the herbs and herbs of the island.
It is eaten in many ways, raw with fruit and bread, in omelets or cooked with lamb. Combines with white wines with acidity.
